| Re: Food Korner's October Competition Dampukht Alloo Ingredients 1 1/2 tb Tamarind paste 2 c Water 8 sm Boiling potatoes 1/4 c Corn oil 1 md Onion; thinly sliced 2 ts Minced fresh ginger 4 Garlic cloves; minced 1/2 ts Dried red pepper flakes 1/2 ts Ground turmeric 1/2 ts Ground cardamom 1/2 ts Ground fennel 1/2 ts Cinnamon 1/4 ts Freshly ground pepper Salt Method: Dissolve tamarind paste in 1 cup water. Let stand 30 minutes. Strain. Boil potatoes until just tender. Cool completely, then peel and cut into four. Heat oil in heavy large skillet over medium heat. Add onion and cook until crisp and lightly browned, stirring frequently, about 10 minutes. Remove from skillet. Add potatoes and brown well on all sides. Remove from skillet. Pour off all but 1 tablespoon oil from skillet. Add ginger and garlic and stir 1 minute. Stir in pepper flakes and turmeric. Blend in 2 tablespoons water. Mix in onion. Add potatoes, tamarind liquid and remaining 1/2 cup water. Stir in cardamom, fennel, cinnamon and pepper. Cover and simmer until sauce has thickened slightly, about 10 minutes. Season with salt. Serve hot.

| Re: Food Korner's October Competition SHAHENSHAHI ALOO INGREDIENTS: ½ kg small round potatoes 1 large onion , minced 1 green chillies 1 tbsp kothmir chopped ½ tsp garlic paste 1 tomatoes chopped ½ tsp jeera 1 peppercorns 1 cloves 4cm stick cinnamon ½ tsp coriander seeds 1 cup sour curds salt to taste oil for deep frying METHOD: Boil the potatoes in salted water. Drain, peel and halve. Grind chillies and garlic to a fine paste. Heat oil in a pan and deep fry potatoes till light brown. Drain and set aside. Heat a little oil and brown the jeera, coriander seeds, cinnamon,cloves and pepper corns. Add chopped onion,chilli-garlic paste and fry for two minutes. Add haldi, tomatoes and beaten sour curds and fry till oil floats to the top. Add fried potatoes. Stir well and cook over a low flame for a few minutes. Garnish with kothmir and serve hot.

| Griddle Baked Potato Bread (Aloo ki Roti) Ingredients 1/2 lb. potatoes all purpose or Russet 3/4 teaspoon cumin seeds 1/2 cup flour all purpose 3/4 teaspoon coriander seeds crushed 2 Medium green chilies minced - preferably serranos 1/4 teaspoon Salt to taste 1 tablespoon cilantro chopped 1 1/2 tablespoons oil or melted ghee 1 teaspoon red pepper crushed dried flakes Oilfor drizzling 1 1/2 teaspoons mango powder - amchur Flourfor dusting Instructions for Griddle Baked Potato Bread (Aloo ki Roti) l. Boil potatoes, peel and mash. Add flour, chilies, cilantro, pepper flakes, mango powder, cumin and coriander seeds and salt. Mix well with finger tips. Drizzle oil on top and continue to mix by hand. Dough will be soft and pliable. Divide into 6 portions, roll into balls and set aside covered. 2. Lightly dust rolling surface with flour. Take a ball of dough and flatten into a 2" round patty. Roll into 1/4" thick circle, lifting and turning dough over to make sure it doesn't stick. Dust lightly with additional flour if necessary. Repeat process with remaining dough. Set aside, without allowing edges to touch. 3. Heat griddle on medium high heat for 2-3 minutes, until a drop of water flicked on it sizzles. Carefully transfer a roti to griddle and drizzle 1/4 teaspoon oil around edges, tilting griddle to allow oil to run under roti. Cook about 1 1/2 minutes, until brown spots appear. Turn over and repeat process with 1/4 teaspoon oil. Cook about 1 minute, until brown spots appear. Remove to serving plate and keep warm. Cook remaining rotis in the same way. 4. Serve with curry or a side dish.

| Re: Food Korner's October Competition khaaja Aaloo Ingredients Potatoes - 4 to 5 Black cumin - ½ Tsp Onions - 2 Turmeric - ¼ Tsp Garam Masala Powder - ½ Tsp Yogurt - ½ Cup Coriander - 1 Tbsp Oil - As required Cashews - 10 Garlic Paste - 1 Tsp Ginger Paste - 1 Tbsp Green chilies - 2 Salt - As required Tomatoes - 2 to 3
1- Heat oil in a pan and fry the onions. 2- Now add turmeric, black cumin, garam masala, cashews, garlic paste, ginger paste , salt, yogurt and sauté. 3- Add boiled potatoes. 4- Chop green chilies, coriander and tomatoes. 5- Serve potatoes with green chilies, coriander and tomatoes.

| Re: Food Korner's October Competition Aloo Bonda Recipe ![]() Ingredients: • 4 Potatoes • 2 Cups besan • 2 Green chilies • 1/2 tsp Turmeric powder • 1/2 tsp Red chilli powder • 1/4 tsp Garam masala • 2 Cups oil How to make Aloo Bonda:•Boil the potatoes and mash it properly. •Add red chili powder, garam masala, chopped green chilies to mashed aloo. •Make ball of mashed aloo mixture. •Add water to besan and make a batter of medium consistency. •Now add turmeric powder and salt to batter. •Dip each ball in the batter. •Fry it till it turns golden brown. •Serve hot with tomato ketchup.
