    Talking ~Cooking Tips & Tricks~

    Salam to all of you cooks out there .
    I am starting this new thread where we can share some cooking tips & tricks. Share any tips & tricks you think that will be helpful in the kitchen for new & old cooks
    So here we go.

    I will share the first tip






    Tip: If fish is to be stored for more than a day, clean it, rub with salt, turmeric and if liked, a dash of vinegar before freezing.

    Sunken cake


    Sunken center in a cake could be due to too much sugar, shown by a sticky center and very brown crust. It could also be due to too much baking powder or undercooking in a low temperature oven

    Instant lemonade

    Pour lemon juice with sugar and a little salt into ice trays, to make cubes which can be used for instant lemonade.

    Prevent Onions From Burning, Frying Add a little milk to onions while frying, this will help retain a rich colour and prevent them from burning.

    To remove excess oil in any fried vegetables

    To remove excess oil in any fried vegetables Sprinkle a little gramflour over the vegetables. Gramflour absorbs the excess oil and makes the vegetable tastier.

    To make pooris more crispy add a little rice flour to the wheat flour while kneading.

    Remove the stems of green chilies while storing them .This will help them to stay fresh for long.

    Biscuits: If you keep a piece of blotting paper at the bottom of the container, it will keep biscuits fresh for a longer time.

    Pickle (achar),

    making pickle (the old recipe), if u feel its going to be spoiled(kharab). Take it out of the jar and put it in an open pan cook it on very low low heat. (as there may be some water in vegies thats reacting with oil). when u feel like water have evapurated let it cool . then put it in clean DRY jar.

    Butter: Avoid the use of butter. If it is essential to use, use a butter containing low saturated fat or with plant stanols (which avoid absorption of cholesterol by our body) or similar substitutes.

    Haleem banate waqt machine k bajaye lakri ke chamach se ghutein, iss sai waise he lais aye ga jaisa bazaar mein milne waale haleem mei aata hai.machine use krne sai lais nhi banta. (chef zakir)

    Apples: Apply some lemon juice on the cut surface of the apple to avoid browning. They will look fresh for a longer time.

    Bee and Scorpion Sting Relief: Apply a mixture of 1 pinch of chewing tobacco and 1 drop of water. Mix and apply directly and immediately to the sting; cover with band aid to hold in place. Pain will go away in just a few short minutes.

    Bitter Gourd (Karela): Slit Karelas at the middle and apply a mixture of salt, wheat flour and curd all round. Keep aside for 1/2 an hour and then cook.
    Celery: To keep celery fresh for long time, wrap it in aluminium foil and place in the refrigerator.

    Burnt Food: Place some chopped onion in the vessel having burnt food, pour boiling water in it, keep for 5 minutes and then clean.

    Chopping: Use a wooden board to chop. It will not blunt the knife. Don't use a plastic board, small plastic pieces may go with the vegetables.

    Coriander/Mint: You can use dried coriander and mint leaves in coarse powder form in vegetable curry or chutney, if fresh ones are not available.
    To keep them fresh for a longer time, wrap them in a muslin cloth and keep in a fridge.
